You might check with North Texas Wind Symphony. They made a CD maybe ten years ago with Fantasia on it with a wind band accompaniment. They should be able to tell you where to get it. Also check with Boosey & Hawkes publishing. I think Jacob scored a part for both band and orchestra, but it is difficult to find a vendor for the large accompaniment (piano accompaniment is easier to find).
